Easy Party Appetizers: Goat Cheese Bruschetta

I love hosting a dinner party! Many people look at me with the side eye when I say it but I get a total kick out of setting up my home for an evening of good company, laughter and vino.  Dinner parties also afford me the opportunity to play around with food and drink recipes that I usually wouldn’t consider.  I recently hosted a girls night in and included on the menu were these tasty goat cheese bruschetta.  I found the recipe online (sorry, can’t recall the site) and after a trial and error batch I was well on my way to making what ended up as the most popular option on the menu.  Ahhh, success!!  Needless to say, it will now be a staple on the dinner party menu and if simple and easy recipes make you happy, I’m recommending this one for you!

Bruschetta with Goat Cheese, Figs and Honey

The Ingredients:

  • Half loaf (5 oz.) baguette, cut into ½ inch slices
  • 4 oz goat cheese
  • 2 ripe figs, diced
  • Clover honey to drizzle

The Raw Materials:

  • 1 Baking Sheet

The Instructions:

  • Preheat oven to 400°F
  • Place baguette slices in single layer on baking sheet.
  • Bake 8–10 minutes, turning each slice until both sides are crisp and golden around edges
  • Let cool
  • Spread cheese on toasted baguette slices.
  • Top with figs and lightly drizzle with honey.

You can substitute Crostini’s for the baguette.  Either way, this recipe is worry-free and easy enough to make for your next bridal or baby shower.  This recipe makes 13–15 slices.  Bon apetit!

Chew On This: Oreomisu

A strange phenomenon occurred during last month’s grocery trip – I bought a bag of Oreo cookies.  Needless to say, one month later they were still unopened and I needed a way to get rid of them.  A quick online search for oreo desserts led me to this recipe on Clumbsy Cookie.  It dates back to 1998 but is still deliciously appropriate for any special event you’re planning these days.

Oreomisu

The Ingredients:

  • 6 Oreo cookies
  • 2 tbsp mascarpone cheese
  • 1 tsp icing sugar
  • 2 drops vanilla extract
  • ¼ cup milk

The Raw Materials:

  • 1 Medium sized mixing bowl
  • Small wisk

The Instructions:

  • Break apart the oreo cookies and scrape the filling to a bowl and set aside the wafers.
  • To the Oreo fillings add the mascarpone and icing sugar and mix well with a small whisk.
  • Mix the milk and the vanilla extract and make crumbs out of two wafers (you can do this with your fingers or press them with the bottom of a glass or rolling pin).
  • In small serving plates arrange alternatively the chocolate wafers dipped in the milk and the mascarpone cream. Start with a wafer and use five for each Oreomisu.
  • finish with mascarpone cream.
  • Top with the wafer crumbs and refrigerate.

Sweet and simple and better yet, there’s no baking involved which makes this the perfect recipe for a spring or summer bachelorette party, girls night in or midnight nightcap for wedding guests with sweettooths.  This recipe serves two but ingredients can be doubled to accommodate more.
